You don’t need a pizza stone for grilled flatbread
Yes, you can make great flatbread on a gas grill without a pizza stone. Just use a heavy baking sheet or cast iron skillet.
Here’s the thing: flatbread is thin and cooks in maybe 3–4 minutes total. A pizza stone helps with heat retention for thick pizzas, but for flatbread, a metal pan does the same job. Preheat the pan on the grill (on high, lid closed) for a few minutes, then put your oiled dough on it. Cover and cook until puffed and charred in spots, flip, repeat.
If you want those classic grill marks, skip the pan and put the dough directly on the grates—but watch it carefully so it doesn’t fall through. Oil the dough, not the grates. I prefer a pan because it’s less fussy.
This is actually easier than messing with a stone, and cleanup is a breeze.
