Stovetop is the only way to save leftover spaghetti

The microwave turns it into rubbery, dry mess. You know this. Pasta is starch and water – reheating it without moisture just forces the water out faster.

Here’s the move: throw the spaghetti in a nonstick skillet, add a tablespoon or two of water (or leftover sauce if you have it), cover with a lid, and heat on medium-low. Let it steam for 1-2 minutes, then toss. The steam rehydrates the starch, bringing back that al dente bounce. If it looks dry, add a little more water.

For leftover sauce, heat it separately and pour over. Don’t nuke the whole plate together unless you like sad, soggy noodles.
