Start with a kettle grill and a reliable thermometer
Three things: a Weber kettle, a Thermapen, and a chimney starter. That’s it. You don’t need a smoker, a griddle, or a rotisserie kit. You need a charcoal grill that can sear, smoke, and roast, a quick-read thermometer so you don’t serve hockey pucks, and a chimney to light coals without lighter fluid (which tastes like regret).
The Weber kettle is the Toyota Corolla of outdoor cooking. Cheap, versatile, and parts are everywhere. You can grill burgers, smoke a brisket, or bake bread in it with a simple two-zone setup. The Thermapen (or a cheaper Thermoworks clone) takes the guesswork out of doneness. And the chimney eliminates the janky lighter-fluid-lighter-fluid dance.
Everything else—tongs, grill brush, cast iron skillet—you probably already own. Resist the urge to buy a $300 offset smoker before you’ve cooked a single whole chicken. Master the basics: fire management, temperature control, and knowing when to leave the lid closed.
A charcoal chimney is not optional. Neither is a thermometer. Save the fancy gadgets for later.
