The trick is indirect heat. You don’t want the fire directly under the pan or you’ll burn the chips before the cheese melts. Instead, let the fire burn down to coals, then set your sheet pan on a grate a few inches above the coals, off to the side a bit.

Use a standard half-sheet pan (aluminum is fine, cheap, and disposable). Line it with heavy-duty foil. Build your nachos in layers: chips, cheese, toppings, then another light layer of cheese on top to act as a binder. Don’t overload it – we’re not baking, we’re melting.

Tent another piece of foil over the whole thing to trap the heat and melt everything evenly. Give it 5–8 minutes, then check. Rotate the pan if one side is cooking faster. You’re looking for bubbly cheese, warm chips in the middle, and the edges just starting to brown.

Last thing: don’t use cold toppings like sour cream or salsa on top before grilling. Add those after. Pile on the hot stuff first (beans, meat, peppers, onions) then hit it with the fire.
