The Canadian side of Niagara Falls leans into contemporary Canadian cuisine — Niagara wines, local produce, farm-to-table with a French technique backbone. The American side plays it safer: steak and seafood with Italian and French backups. Neither will blow your mind if you’re from a real food city, but the Canadian side edges ahead on ambition. The wine list alone (Niagara wine country is right there) gives Ontario the advantage.
